Out-of-date product on the shelf is a risk to customers' health, a fine during an inspection and a reputational hit no discount can fix. It doesn't happen by chance: new deliveries go in front of older stock, nobody checks the back rows, and markdowns happen after the date has already passed. FEFO rotation (first expired, first out) and a regular scheduled walk remove these causes.

Start with the coolers and deli — that's where shelf lives are shortest — then bread and produce, then grocery sections according to the schedule. Don't check only the front row: pull product from the back. Anything taken off sale goes straight out of the sales floor and is processed the same day.

Common violations

  • Only the front row is checked: the expired yogurt sits at the back of the shelf, and the customer reaching to the back for a "fresher" one finds it first.
  • New deliveries go in front of existing stock because it's quicker: older product gets pushed to the back and sits there until it expires.
  • Deli items are repacked or relabeled with a new date — a direct food poisoning risk and one of the most serious food safety violations.
  • Pulled out-of-date product is left in a box on the sales floor "until tonight", and an associate who doesn't know it's a write-off puts it back on the shelf.
  • Repeat expiries are never analyzed: the store orders more than it sells for weeks and writes off the same items every week.

Frequently asked questions

FIFO means "first in, first out": whatever arrived first is sold first. FEFO means "first expired, first out": rotation is based on the expiry date. FEFO is more reliable for food, because a later delivery sometimes arrives with a shorter date.

Perishables, deli, bread and baby food — daily. Grocery, drinks and non-food are easiest to check on a schedule, splitting the store into sections so that each gets a full check at least weekly, or at another frequency set by company policy.

In many countries a "use by" date includes the stated day: the product can be sold on that day but not after it ends. Exact rules depend on your country's legislation and the type of date mark, so check local regulations. Many retailers pull or mark down such product earlier — what matters is that the rule is consistent and every employee knows it.
