HACCP

Digital HACCP logs and plan — no paper, no surprises at inspection

Staff fill in logs on their phones, any reading outside a critical limit instantly becomes a deviation with corrective actions, and the HACCP plan is built following the 12 Codex steps. Regulations, forms and limits match your country: Kazakhstan, Russia, Uzbekistan or the international profile.

Highlights

01

Records you can trust

The server records the entry time. Edits require a reason and keep a history; records can only be voided, never deleted. Back-dated entries are marked “entered late”.

02

No deviation gets lost

A value outside the limit opens a deviation, and it can't be closed without a correction, product disposition, root cause and preventive measure.

03

Every requirement has a source

Every log, limit and equipment type references a document and clause. Where a regulation gives no figures, we say so plainly, and you set the limits.

Why it matters

The logs are filled in. But were they filled in on time?

Paper HACCP logs are often completed right before an inspection, and a temperature breach looks like just another line. The HACCP plan sits in a binder — written once and disconnected from what actually happens in the kitchen.

The usual way

  • Logs are filled in at the end of the week “from memory”
  • The fridge read +9 °C — the entry is there, but no action was taken
  • The HACCP plan hasn't been reviewed since opening day
  • Health certificates and thermometer calibration come to mind only when the inspector arrives

With jeCheck

  • Reminders on time, missed entries visible instantly, server-side timestamps
  • Going outside a limit opens a deviation with corrective actions
  • A plan following the 12 Codex steps, with versions and a review date
  • Due dates for documents, health certificates and calibration — with reminders

Features

Logs based on national regulations

Log templates with fields and limits from the regulations: storage, staff health checks, finished-dish quality, cooking temperature, serving, frying oil, receiving, cleaning. Build your own logs in the editor.

Schedules and missed entries

At shift start, at set times, daily, weekly, monthly or on event. A grace period for late entries and a summary of missed entries for the manager.

Deviations and corrective actions

Correction, product disposition, root cause, preventive measure, photos, a repeat reading and a fix-it task with an “after” photo.

HACCP plan in 12 steps

Team, product description, flow diagram, on-site confirmation, hazard analysis, decision tree, critical limits, monitoring, verification.

Staff and suppliers

Health certificates, food hygiene training, HACCP training, supplier documents — with due dates and reminders.

Print in the required format

The plan with CCP worksheets, the HACCP team order, logs for any period and the deviation register — as PDF for the inspector.

Logs and charts

Every fridge on a chart with its acceptable range

Equipment limits come from your country's regulations: fridges, freezers, cold rooms by product type, storerooms. A target range narrower than the critical limit gives a warning before a deviation, and the chart shows which equipment keeps drifting.

  • Critical limit and target range — a warning before a deviation
  • Limits depend on the product: minced meat products ≥ +85 °C, cutlet mixture products ≥ +90 °C
  • Entries per location, per piece of equipment or per staff member on shift
  • Sanitary day or equipment switched off — “no entry required” with a reason
  • Edits with a reason and history, voiding instead of deletion
  • Offline — the reading time is saved on the device, duplicates are prevented
HACCP plan

The Codex decision tree and a risk matrix — instead of a Word table

The editor walks you through the 12 Codex steps. A standard food service flow diagram and a library of hazards by process step give you a draft in one evening — all that's left is to assess, justify and approve. Approval creates a locked version of the plan.

  • Likelihood × severity on the 4×4 scale of GOST R 51705.1-2024
  • The 2022 Codex decision tree: CCP, OPRP or prerequisite programme
  • Critical limits with a justification — a reference to the regulation
  • A CCP monitoring log created from the limits in one click
  • Completeness check: the plan can't be approved until all issues are resolved
  • Plan versions and a review date with a reminder
Inspection readiness

The inspector is here — documents printed in two minutes

The readiness index measures whether logs are kept on schedule, deviations are closed, the plan is approved, and health certificates and calibration are up to date. Print forms are generated from the same data, not copied out by hand.

  • Readiness index across five components, with hints on what to improve
  • Any log in the required format for any period
  • HACCP plan with the CCP list and worksheets
  • Order establishing the HACCP team
  • Deviation register with corrective actions
  • Verification schedule: audits, record reviews, calibration, lab testing

How it works

  1. 1 Choose a country

Kazakhstan, Russia, Uzbekistan or the international Codex profile.

  2. 2 Select locations and equipment

Fridge and storeroom limits are filled in from the regulations.

  3. 3 Turn on the logs

Recommended ones are pre-selected, each with a reference to the regulation clause.

  4. 4 Build your HACCP plan

Following the 12 Codex steps with a standard food service flow — now or later.

Frequently asked questions

Yes. TR CU 021/2011 (Art. 10, Part 3, item 11) and the sanitary rules of Kazakhstan and Russia allow records to be kept on paper and/or electronic media. For an inspection, the log for any period prints in the required format.

There are profiles for Kazakhstan (DSM-16 sanitary rules), Russia (SanPiN 2.3/2.4.4282-26), Uzbekistan (SanPiN No. 0027-22) and an international Codex profile for all other countries. You pick the profile in the setup wizard and can change it in settings.

The entry is saved with a deviation, and the location manager and HACCP manager get a push notification. The deviation can only be closed once corrective actions are recorded: the correction, product disposition and, for critical deviations, the root cause and preventive measure.

Once the due time and grace period pass, the entry counts as missed and the manager gets a summary. It can still be added later with a reason — it will be marked “entered late”, and missed entries lower the readiness index.

Edit — yes, with a reason: previous values stay in the history. Delete — no, entries can only be voided with a reason and remain visible as voided.

Yes. The editor walks you through the 12 Codex steps, suggests a standard food service flow diagram and hazards for each step, and the decision tree identifies the critical control points (CCPs). Responsibility for the analysis stays with your HACCP team — jeCheck provides the structure and checks completeness.

Not yet: entries are made by staff on a phone, tablet or computer. Integrations are planned separately.

Only the HACCP manager. This keeps the review of corrective actions separate from carrying them out — verification under Codex principle 6.
